Description

Indulge in these moist and fudgy zucchini brownies that are both delicious and healthy.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups finely grated zucchini, loosely packed and not squeezed
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup unsalted butter (for frosting)
  • 1/4 cup unsweetened cocoa powder (for frosting)
  • 2 cups powdered sugar (for frosting)
  • 3 tablespoons milk (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • A pinch of salt (for frosting)

Instructions

  1. Preheat your oven to 350°F. Grease a 9-by-13-inch baking pan or line it with parchment paper.
  2. In a large mixing bowl, whisk together flour, cocoa powder, granulated sugar, baking soda, and salt until evenly combined.
  3. Wash and finely grate the zucchini. Do not peel it, and do not squeeze out the moisture.
  4. Add the grated zucchini, vegetable oil, and vanilla extract to the dry ingredients. Stir until combined.
  5. Fold in the semi-sweet chocolate chips until evenly distributed.
  6. Spread the thick batter evenly into the prepared baking pan, smoothing the top with a spatula.
  7. Bake for 30–35 minutes, or until a toothpick inserted near the center comes out with a few moist crumbs.
  8. While the brownies cool, melt the butter in a small saucepan over low heat. Whisk in cocoa powder until smooth.
  9. Remove from heat. Add powdered sugar, milk, vanilla extract, and salt. Whisk until smooth and spreadable.
  10. Spread the chocolate frosting over the slightly cooled brownies.
  11. Allow the brownies to cool completely so the frosting sets. Cut into 16 squares and serve.

Notes

  • Use finely grated zucchini for best results.
  • Never squeeze out the zucchini moisture.
  • If using very watery zucchini, lightly measure it after grating.
  • Don’t overmix the batter; stir just until combined.
  • For extra chocolate flavor, add another 1/4 cup chocolate chips.
  • Allow the brownies to cool before cutting for clean squares.
