Description
A delicious and easy-to-make Mushroom & Cheese Egg Bake, also known as a crustless quiche, perfect for brunch or a quick breakfast.
Ingredients
- 8 large eggs
- 8 oz fresh mushrooms, sliced
- 1 cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- ½ cup whole milk or heavy cream
- ½ medium yellow onion, finely diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil or butter
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon dried thyme
- 2 tablespoons chopped fresh parsley, optional
Instructions
- Preheat your oven to 375°F. Grease a 9-inch pie dish or an 8 × 8-inch baking dish.
- Heat the olive oil or butter in a skillet over medium heat. Add the sliced mushrooms and cook for 5–7 minutes until their moisture evaporates and they begin to brown.
- Add the diced onion and cook for another 3–4 minutes until softened. Stir in the minced garlic and thyme, cooking for 30 seconds. Remove from the heat and let the mixture cool slightly.
- In a large bowl, whisk together the eggs, milk or cream, salt, and black pepper until evenly combined.
- Stir in the cheddar, mozzarella, and sautéed mushroom mixture. Reserve a small handful of cheese for the top if desired.
- Pour the egg mixture into the prepared dish. Sprinkle the reserved cheese over the surface.
- Bake for 30–35 minutes, or until the center is set and a knife inserted near the middle comes out mostly clean. The center should reach 160°F.
- Let the egg bake rest for 5–10 minutes to firm up. Garnish with fresh parsley and slice into wedges or squares.
Notes
- Remove excess mushroom moisture to prevent a watery quiche.
- Use freshly shredded cheese for better texture.
- For a creamier bake, use heavy cream instead of milk.
- Add more vegetables like spinach or bell peppers, cooking off excess moisture first.
- Mix in cooked bacon, diced ham, or cooked sausage for added protein.
- If the top browns before the eggs set, loosely cover with foil for the remaining baking time.
