Ingredients
- 3 cups graham cracker crumbs
- 3 tablespoons light brown sugar
- 10 tablespoons unsalted butter, melted
- 8 oz cream cheese, softened
- ¾ cup powdered sugar
- 8 oz whipped topping, thawed
- 2 boxes (3.4 oz each) instant butterscotch pudding mix
- 3 cups cold whole milk or half-and-half
- 8 oz whipped topping, thawed
- ½ cup butterscotch chips or toffee bits
- ¼ cup chopped pecans, optional
- Butterscotch or caramel sauce, optional
Instructions
- Make the crust: Combine graham cracker crumbs, brown sugar, and melted butter. Press firmly into the bottom of a 9×13-inch dish. Refrigerate or freeze for about 20 minutes to firm up.
- Make the cream cheese layer: Beat softened cream cheese and powdered sugar until smooth. Gently fold in 8 oz whipped topping.
- Layer: Spread the cream cheese mixture evenly over the chilled crust.
- Make the pudding: Whisk the instant butterscotch pudding mixes with cold milk for 1–2 minutes, until thick. Let stand for a few minutes to thicken further.
- Add pudding: Carefully spread the butterscotch pudding over the cream cheese layer.
- Top with whipped cream: Spread the remaining whipped topping evenly over the pudding.
- Garnish: Sprinkle with butterscotch chips, toffee bits, and chopped pecans. Drizzle with butterscotch or caramel sauce if desired.
- Chill: Cover and refrigerate for at least 4–6 hours, preferably overnight, so the layers set firmly.
