A delicious and crispy recipe for Okra Hush Puppies, perfect as a snack or side dish.
Ingredients
- 1 cup yellow cornmeal
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 cup finely chopped fresh okra
- 1/4 cup finely diced onion
- 1/4 cup finely diced jalapeño, optional
- 1 large egg
- 3/4 cup buttermilk
- 2 tablespoons melted butter
- Vegetable oil, for frying
Instructions
- In a large bowl, whisk together the cornmeal, flour, baking powder, baking soda, salt, pepper, and paprika.
- Stir in the chopped okra, onion, and jalapeño.
- In another bowl, whisk together the egg, buttermilk, and melted butter.
- Pour the wet ingredients into the dry ingredients and stir just until combined. Do not overmix.
- Heat about 2 inches of vegetable oil in a deep skillet or Dutch oven to 350°F.
- Drop the batter by rounded tablespoons into the hot oil, working in batches so you don’t overcrowd the pan.
- Fry for 2–3 minutes per side, turning occasionally, until golden brown and crisp.
- Transfer to a paper towel-lined plate to drain.
- Serve hot with ranch dressing, remoulade sauce, or honey butter.
Notes
- If the batter seems too loose, let it rest for 5 minutes before frying. The okra’s natural moisture can make the mixture softer.
