Description

A delicious and crispy recipe for Okra Hush Puppies, perfect as a snack or side dish.


Ingredients

  • 1 cup yellow cornmeal
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 cup finely chopped fresh okra
  • 1/4 cup finely diced onion
  • 1/4 cup finely diced jalapeño, optional
  • 1 large egg
  • 3/4 cup buttermilk
  • 2 tablespoons melted butter
  • Vegetable oil, for frying

Instructions

  1. In a large bowl, whisk together the cornmeal, flour, baking powder, baking soda, salt, pepper, and paprika.
  2. Stir in the chopped okra, onion, and jalapeño.
  3. In another bowl, whisk together the egg, buttermilk, and melted butter.
  4. Pour the wet ingredients into the dry ingredients and stir just until combined. Do not overmix.
  5. Heat about 2 inches of vegetable oil in a deep skillet or Dutch oven to 350°F.
  6. Drop the batter by rounded tablespoons into the hot oil, working in batches so you don’t overcrowd the pan.
  7. Fry for 2–3 minutes per side, turning occasionally, until golden brown and crisp.
  8. Transfer to a paper towel-lined plate to drain.
  9. Serve hot with ranch dressing, remoulade sauce, or honey butter.

Notes

  • If the batter seems too loose, let it rest for 5 minutes before frying. The okra’s natural moisture can make the mixture softer.
