Ingredients
- 1 unbaked 9-inch (23 cm) pie crust
- 7 large egg whites
- 1½ cups (300 g) granulated sugar
- 1½ cups (150 g) graham cracker crumbs
- 1½ cups (165 g) finely chopped pecans
- 1½ cups (120 g) sweetened shredded coconut
- 2–3 bananas, sliced (for serving)
- 1 cup (240 mL) whipped cream (for serving)
- Extra chopped pecans, optional (for serving)
Instructions
- Preheat the oven: Heat the oven to 325°F (165°C).
- Prepare the filling: In a large bowl, combine the egg whites, sugar, graham cracker crumbs, pecans, and shredded coconut.
- Mix by hand: Stir gently with a spatula or wooden spoon until everything is evenly combined. The mixture should look thick and somewhat crumbly.
- Fill the crust: Pour the mixture into the unbaked 9-inch (23 cm) pie crust and spread it evenly.
- Bake: Bake for 25–30 minutes, until the top looks lightly golden and the filling is set around the edges but still slightly gooey in the center. Do not overbake.
- Cool briefly: Let the pie rest for about 10–15 minutes. It is traditionally served warm.
- Add the toppings: Arrange sliced bananas over individual pieces and add a generous dollop of whipped cream.
- Garnish: Sprinkle with extra chopped pecans if desired.
