  • 1½ cups (120 g) sweetened shredded coconut
  • 23 bananas, sliced (for serving)
  • 1 cup (240 mL) whipped cream (for serving)
  • Extra chopped pecans, optional (for serving)

Instructions

  1. Preheat the oven: Heat the oven to 325°F (165°C).
  2. Prepare the filling: In a large bowl, combine the egg whites, sugar, graham cracker crumbs, pecans, and shredded coconut.
  3. Mix by hand: Stir gently with a spatula or wooden spoon until everything is evenly combined. The mixture should look thick and somewhat crumbly.
  4. Fill the crust: Pour the mixture into the unbaked 9-inch (23 cm) pie crust and spread it evenly.
  5. Bake: Bake for 25–30 minutes, until the top looks lightly golden and the filling is set around the edges but still slightly gooey in the center. Do not overbake.
