Description

A cozy and hearty Old-Fashioned Potato & Bacon Soup that warms the soul.


Ingredients

  • 4 slices of bacon, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups potatoes, peeled and diced (about 4 medium potatoes)
  • 4 cups chicken broth
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/4 cup chopped fresh parsley (optional)
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

  1. In a large pot over medium heat, cook the chopped bacon until crispy. Remove the bacon and set aside, leaving the drippings in the pot.
  2. Add the diced onion to the pot and sauté in the bacon drippings until softened, about 5 minutes. Stir in the minced garlic and cook for an additional minute.
  3. Add the diced potatoes, chicken broth, salt, pepper, and thyme to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
  4. Using a potato masher, mash some of the potatoes in the pot to thicken the soup while leaving some chunks for texture.
  5. Stir in the milk and cooked bacon, and heat through for another 5 minutes. Adjust seasoning if necessary.
  6. Serve hot, garnished with fresh parsley and shredded cheddar cheese if desired.

Notes

  • For a creamier soup, substitute half-and-half for the milk.
  • Add 1 cup of frozen corn or peas for extra flavor and nutrition.
