Description
A cozy and hearty Old-Fashioned Potato & Bacon Soup that warms the soul.
Ingredients
- 4 slices of bacon, chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups potatoes, peeled and diced (about 4 medium potatoes)
- 4 cups chicken broth
- 1 cup milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1/4 cup chopped fresh parsley (optional)
- 1/2 cup shredded cheddar cheese (optional)
Instructions
- In a large pot over medium heat, cook the chopped bacon until crispy. Remove the bacon and set aside, leaving the drippings in the pot.
- Add the diced onion to the pot and sauté in the bacon drippings until softened, about 5 minutes. Stir in the minced garlic and cook for an additional minute.
- Add the diced potatoes, chicken broth, salt, pepper, and thyme to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
- Using a potato masher, mash some of the potatoes in the pot to thicken the soup while leaving some chunks for texture.
- Stir in the milk and cooked bacon, and heat through for another 5 minutes. Adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley and shredded cheddar cheese if desired.
Notes
- For a creamier soup, substitute half-and-half for the milk.
- Add 1 cup of frozen corn or peas for extra flavor and nutrition.
