Panko-Parmesan Crusted Zucchini Fries are a crispy and delicious snack or side dish, perfect for any occasion.
Ingredients
- 2 medium zucchinis, cut into fry shapes
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs
- 1/4 cup all-purpose flour
- Cooking spray or olive oil for drizzling
Instructions
- Preheat the oven to 425°F. Line a baking sheet with parchment paper and lightly spray it with cooking spray or drizzle with olive oil.
- In a shallow bowl, combine panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and black pepper. Mix well.
- In another shallow bowl, beat the eggs. In a third shallow bowl, place the flour.
- Dredge each zucchini fry in flour, shaking off the excess. Dip it into the beaten eggs, then coat it in the panko mixture, pressing gently to adhere. Place the coated fries on the prepared baking sheet.
- Once all the zucchini fries are coated, lightly spray or drizzle them with olive oil.
- Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy, flipping halfway through for even cooking.
- Serve warm with your favorite dipping sauce.
Notes
- For extra flavor, try adding Italian seasoning or crushed red pepper flakes to the panko mixture.
- You can also substitute the zucchini with eggplant or sweet potatoes for a different twist.
