Peach Blondies with Fresh Peach Glaze are a delightful summer dessert featuring a rich, buttery blondie base topped with a sweet and fruity peach glaze.
Ingredients
- ½ cup unsalted butter, melted and cooled
- 1 cup light brown sugar, packed
- 1 large egg, room temperature
- 1 teaspoon vanilla extract
- 1½ cups all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 1 teaspoon ground cinnamon
- 2 medium fresh peaches, peeled and diced (about 2 cups)
- ½ cup chopped pecans or walnuts (optional)
- 1 cup powdered sugar
- 2–3 tablespoons finely chopped or mashed fresh peach
- ½ teaspoon vanilla extract
- 1–2 teaspoons milk (if needed, to thin the glaze)
Instructions
- Preheat the oven to 350°F (175°C). Grease or line an 8 x 8-inch baking pan with parchment paper.
- In a large bowl, whisk together the melted butter and brown sugar until smooth. Beat in the egg and vanilla extract.
- In another bowl, whisk together the flour, baking powder, salt, and cinnamon. Gradually stir the dry ingredients into the wet ingredients until just combined. Gently fold in the diced peaches and the chopped nuts, if using.
- Spread the batter evenly into the prepared baking pan. Bake for 30–35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out with a few moist crumbs. Let the blondies cool completely in the pan.
- In a small bowl, whisk together the powdered sugar, mashed fresh peach, and vanilla extract. Add milk, 1 teaspoon at a time, until the glaze reaches a smooth, pourable consistency.
- Drizzle the glaze over the completely cooled blondies. Allow the glaze to set for 15–20 minutes before slicing into 16 squares.

- Store in an airtight container for up to 2 days at room temperature.
- Refrigerate for up to 5 days.
- Freeze the unglazed blondies for up to 3 months; thaw overnight in the refrigerator and glaze before serving.
- Use ripe but firm peaches to hold their shape during baking.
