Ingredients
- 2 cups all-purpose flour
- ¼ cup granulated sugar
- 2 tsp baking powder
- ½ tsp ground cinnamon
- ¼ tsp salt
- 2 large eggs
- ½ cup whole milk
- 1 tsp vanilla extract
- 2 cups peeled and finely diced fresh peaches
- Vegetable oil, for frying
Instructions
- In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
- In a separate bowl, whisk eggs, milk, and vanilla. Pour the wet ingredients into the dry ingredients and stir just until combined.
- Gently fold in the diced peaches. Avoid overmixing.
- Pour about 2 inches of vegetable oil into a deep skillet or Dutch oven. Heat to 350°F.
- Drop spoonfuls of batter into the hot oil, working in small batches. Fry for about 2–3 minutes per side, turning occasionally, until golden brown and cooked through.
- Transfer fritters to a paper towel-lined plate or wire rack to drain excess oil.
- Whisk powdered sugar, milk, and vanilla until smooth to make the glaze.
- While the fritters are still slightly warm, drizzle or dip them in the glaze.
- Let the glaze set for a few minutes, then enjoy warm.
