Description
A delightful twist on a classic dessert, this Peanut Butter & Jelly Cheesecake combines creamy peanut butter filling with a sweet jelly swirl, all on a buttery graham cracker crust.
Ingredients
- 2 cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¼ cup granulated sugar
- 16 oz cream cheese, softened
- ¾ cup creamy peanut butter
- ¾ cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- ½ cup sour cream
- ½ cup strawberry or grape jelly
- 1 tbsp water
- ½ cup creamy peanut butter (for topping)
- 2 tbsp heavy cream
- ¼ cup strawberry or grape jelly (for topping)
- ¼ cup chopped peanuts, optional
Instructions
- Preheat oven to 325°F. Grease a 9-inch springform pan.
- Mix graham cracker crumbs, melted butter, and sugar. Press firmly into the bottom of the pan.
- Bake for 8–10 minutes, then cool.
- Beat cream cheese and sugar until smooth. Add peanut butter and vanilla and mix until combined.
- Beat in the eggs one at a time, then mix in the sour cream just until smooth.
- Pour half of the cheesecake batter over the crust.
- Warm the jelly with 1 tbsp water until smooth. Drop spoonfuls of jelly over the batter and gently swirl with a knife.
- Pour in the remaining cheesecake batter and add more spoonfuls of jelly. Gently swirl again without overmixing.
- Bake for 55–65 minutes, until the edges are set but the center still has a slight jiggle.
- Turn off the oven, crack the door open, and let the cheesecake cool inside for 1 hour.
- Remove and cool completely, then refrigerate for at least 6 hours, preferably overnight.
- Warm peanut butter with heavy cream until smooth and pourable. Spread or drizzle over the chilled cheesecake.
- Warm the jelly slightly and drizzle it over the peanut butter topping. Sprinkle with chopped peanuts if desired.
- Slice and serve chilled.
Notes
- For best results, refrigerate the cheesecake overnight to allow flavors to meld.
- Feel free to use your favorite jelly flavor for the swirl.
- Chopped peanuts can be omitted for a nut-free version.
