Description
A delicious and moist cake made with pears, dates, and walnuts, topped with a sweet honey glaze.
Ingredients
- 2 cups all-purpose flour
- 1½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- ½ cup unsalted butter, softened
- ¾ cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup sour cream
- 2 tbsp honey
- 1½ cups peeled and finely diced pears
- ¾ cup chopped dates
- ¾ cup chopped walnuts
- ¼ cup honey
- 2 tbsp unsalted butter
- 2 tbsp brown sugar
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat oven to 350°F. Grease and line a 9-inch round cake pan.
- Whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a separate bowl, beat butter and brown sugar for 2–3 minutes, until light and fluffy.
- Beat in the eggs one at a time, then add vanilla and honey.
- Mix in the sour cream.
- Gradually add the dry ingredients, mixing just until combined.
- Gently fold in the diced pears, dates, and walnuts.
- Spread the batter evenly into the prepared pan.
- Bake for 40–50 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10–15 minutes.
- In a small saucepan, combine honey, butter, brown sugar, and salt. Heat over medium-low heat for 2–3 minutes, stirring until smooth.
- Remove from heat and stir in vanilla.
- Poke a few small holes across the warm cake with a toothpick, then slowly drizzle the warm honey glaze over the top.
- Let the cake rest for 15–20 minutes so the glaze can soak in.
Notes
- Tip: Sprinkle extra toasted walnuts over the glaze for a beautiful crunchy finish.
