Ingredients
- 1 cup pecans, chopped
- 1 cup rolled oats
- 1/2 cup almond flour
- 1/2 cup honey
- 1/4 cup unsweetened peanut butter
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 cup mini chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the chopped pecans, rolled oats, almond flour, salt, and cinnamon. Stir until well mixed.
- In a separate bowl, whisk together the honey, peanut butter, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and mix until everything is evenly coated. If desired, fold in the mini chocolate chips.
- Using your hands, form the mixture into small bite-sized balls, about 1 inch in diameter, and place them on the prepared baking sheet.
- Bake for 10-12 minutes or until the bites are golden brown. Remove from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
