A deliciously moist pecan cake topped with creamy cream cheese frosting and a rich caramel praline sauce, perfect for any occasion.
Ingredients
- 2 cups (250 g) all-purpose flour
- 1½ cups (300 g) granulated sugar
- 1 teaspoon (5 g) baking powder
- ½ teaspoon (3 g) baking soda
- ½ teaspoon (3 g) salt
- 1 cup (225 g) unsalted butter, softened
- 3 large eggs
- 1 teaspoon (5 ml) vanilla extract
- 1 cup (240 ml) buttermilk
- 1 cup (110 g) finely chopped pecans
- 8 oz (225 g) cream cheese, softened
- ½ cup (113 g) unsalted butter, softened
- 3 cups (360 g) powdered sugar
- 1 teaspoon (5 ml) vanilla extract
- 1–2 tablespoons (15–30 ml) heavy cream or milk
- ½ cup (113 g) unsalted butter
- 1 cup (200 g) packed brown sugar
- ½ cup (120 ml) heavy cream
- 1 teaspoon (5 ml) vanilla extract
- ¼ teaspoon (1–2 g) salt
- 1 cup (110 g) toasted pecans, roughly chopped
Instructions
- Preheat oven to 175°C (350°F). Grease a 9 × 13-inch (23 × 33 cm) baking pan.
- Whisk together flour, baking powder, baking soda, and salt.
- Beat butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla.
- Add the dry ingredients alternately with buttermilk, mixing just until combined.
- Fold in the chopped pecans.
- Pour into the pan and bake for 35–40 minutes, or until a toothpick comes out clean.
- Cool completely.
- Make the Frosting: Beat cream cheese and butter until smooth. Gradually beat in powdered sugar and vanilla. Add cream or milk until you reach a thick but spreadable consistency. Spread over the cooled cake.
- Make the Caramel Praline Sauce: Melt butter in a saucepan over medium heat. Add brown sugar and heavy cream. Stir continuously and bring to a gentle boil. Cook for 2–3 minutes. Remove from heat and stir in vanilla and salt. Let cool slightly, then stir in some of the toasted pecans.
Notes
- Ensure the butter is softened for both the cake and frosting for better mixing.
- For a richer flavor, use dark brown sugar in the caramel sauce.
- Store any leftover cake in an airtight container in the refrigerator.
