Description

Pineapple Bread is a delicious and moist treat that combines the sweetness of pineapple with a soft, fluffy texture. Perfect for breakfast or as a snack!


Ingredients

  • 250 g all-purpose flour
  • 150 g granulated sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 large eggs, room temperature
  • 120 ml vegetable oil
  • 120 ml pineapple juice
  • 1 tsp vanilla extract
  • 200 g crushed pineapple, well drained
  • 60 g shredded coconut, optional
  • 120 g powdered sugar (for glaze)
  • 23 tbsp pineapple juice (for glaze)

Instructions

  1. Preheat the oven to 175°C. Grease a 23 × 13 cm loaf pan and line it with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk the eggs, vegetable oil, pineapple juice, and vanilla until well combined.
  4. Pour the wet mixture into the dry ingredients. Stir gently just until combined. Do not overmix.
  5. Fold in the drained crushed pineapple and shredded coconut, if using.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Let the bread cool in the pan for 10–15 minutes, then transfer it to a wire rack to cool completely.
  9. Whisk the powdered sugar with 2 tablespoons pineapple juice for the glaze. Add more pineapple juice if needed until you get a thick but pourable glaze.
  10. Drizzle the glaze over the cooled pineapple bread.

Notes

  • Drain the pineapple well so the bread doesn’t become soggy.
  • For stronger pineapple flavor, replace 30–60 ml of the vegetable oil with additional pineapple juice.
  • Add walnuts or pecans for crunch.
  • For a tropical version, use pineapple + coconut + chopped macadamia nuts.
  • Store covered at room temperature for 2–3 days, or refrigerate for up to 5 days.
