Description

A delicious and moist Pineapple Coconut Cake topped with creamy frosting and shredded coconut.


Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsweetened shredded coconut
  • 1 cup crushed pineapple, drained
  • ½ cup unsalted butter, softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • For the frosting:
  • 1 cup unsweetened shredded coconut
  • 8 ounces cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons crushed pineapple, drained

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. Mix well.
  3. Add the shredded coconut, crushed pineapple, softened butter, eggs, vanilla extract, and buttermilk to the dry ingredients. Beat with an electric mixer on medium speed for about 2 minutes until well combined.
  4. Divide the batter evenly between the prepared cake pans.
  5. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  6. For the frosting, beat the cream cheese and softened butter together in a bowl until smooth. Gradually add the powdered sugar, mixing until well combined. Stir in the vanilla extract and crushed pineapple.
  7. Once the cakes are completely cool, place one layer on a serving plate and spread a layer of frosting on top. Place the second layer on top and frost the top and sides of the cake.
  8. Sprinkle the remaining shredded coconut over the top and sides of the frosted cake.

Notes

  • For a tropical twist, add chopped macadamia nuts to the batter or as a topping.
  • For a lighter version, substitute Greek yogurt for half of the butter in the frosting.
