Pineapple Coconut No-Bake Balls are a delightful and easy-to-make treat that combines the tropical flavors of pineapple and coconut, perfect for satisfying your sweet tooth without the need for baking.
Ingredients
- 225 g crushed pineapple, very well drained
- 200 g sweetened shredded coconut
- 200 g graham cracker crumbs
- 120 g powdered sugar
- 115 g unsalted butter, softened
- 1 teaspoon (5 mL) vanilla extract
- ½ teaspoon (2.5 mL) coconut extract, optional
- ¼ teaspoon (1.25 mL) salt
- 100 g additional shredded coconut, for coating
Instructions
- Drain the pineapple: Place the crushed pineapple in a fine-mesh strainer and press firmly to remove as much liquid as possible. Excess moisture can make the balls too soft.
- Make the mixture: In a large bowl, beat the softened butter and powdered sugar until smooth and creamy.
- Add the vanilla, optional coconut extract, and salt.
- Stir in the drained pineapple, 200 g shredded coconut, and graham cracker crumbs.
- Mix thoroughly until a soft, slightly sticky dough forms. If the mixture feels too wet, add 1–2 tablespoons (8–16 g) additional graham cracker crumbs.
- Chill: Cover and refrigerate for 30–60 minutes to firm up the mixture.
- Shape: Scoop about 1 tablespoon (15 mL) of mixture and roll between your palms to form a ball. Repeat with the remaining mixture.
- Coat: Roll each ball in the remaining shredded coconut, gently pressing the coconut onto the surface.
- Chill again: Place the finished balls on a parchment-lined tray and refrigerate for at least 1 hour.
- Serve: Serve chilled or slightly softened at room temperature.
Notes
- Ensure the pineapple is well-drained to prevent the mixture from becoming too wet.
- These no-bake balls can be stored in the refrigerator for up to a week.
- Feel free to adjust the sweetness by adding more or less powdered sugar according to your taste.
