Description

A delightful Southern dessert featuring layers of yellow cake, fresh strawberries, creamy pudding, and whipped topping.


Ingredients

  • 1 box yellow cake mix
  • 3 large eggs
  • ½ cup vegetable oil
  • 1 cup water
  • 4 cups fresh strawberries, sliced
  • ¼ cup granulated sugar
  • 1 package (5.1 oz) instant vanilla pudding mix
  • 3 cups cold milk
  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 16 oz whipped topping, thawed
  • 1 cup fresh strawberries, sliced
  • ½ cup chopped pecans, optional

Instructions

  1. Preheat the oven to 350°F. Prepare the yellow cake mix with the eggs, oil, and water according to the package directions. Bake in a 9×13-inch pan until a toothpick comes out clean, about 25–30 minutes. Cool completely.
  2. Place the sliced strawberries in a bowl and sprinkle with sugar. Toss gently and let them sit for 10–15 minutes to release some of their juices.
  3. Whisk the pudding mix with cold milk for about 2 minutes, until thickened.
  4. In another bowl, beat the softened cream cheese, powdered sugar, and vanilla until smooth. Fold the cream cheese mixture into the prepared pudding.
  5. Cut the cake into bite-size cubes.
  6. Place about half of the cake cubes in the bottom of a large punch bowl or deep glass serving bowl. Add half of the strawberries, followed by half of the pudding mixture and half of the whipped topping.
  7. Repeat the layers with the remaining cake, strawberries, pudding, and whipped topping.
  8. Garnish with sliced strawberries and chopped pecans if desired.
  9. Cover and refrigerate for at least 4 hours, preferably overnight, so the cake becomes soft and flavorful.
  10. Serve chilled and scoop directly from the bowl.
