Ingredients
- 450 g cream cheese, softened
- 150 g granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 240 g crushed pineapple, well drained
- 150 g all-purpose flour
- 100 g granulated sugar
- 100 g unsalted butter, melted
- 100 g chopped pecans
- ½ tsp ground cinnamon
- ¼ tsp salt
- 30 g chopped pecans (optional topping)
- Powdered sugar, for dusting (optional)
- Whipped cream, for serving (optional)
Instructions
- Preheat the oven to 175°C. Lightly grease a 23 × 33 cm baking dish.
- Beat the softened cream cheese and sugar until smooth and creamy. Add the eggs one at a time, beating well after each addition. Mix in the vanilla.
- Gently fold the well-drained crushed pineapple into the cream cheese mixture.
- In a bowl, combine the flour, sugar, chopped pecans, cinnamon, and salt. Pour in the melted butter and stir until the mixture forms coarse, crumbly pieces.
- Pour the pineapple cream cheese mixture into the prepared baking dish and spread evenly. Sprinkle the pecan crunch mixture generously over the top.
- Bake for 35–45 minutes, or until the edges are lightly golden and the center is set but still slightly soft.
- Allow the bake to cool for 20–30 minutes before serving.
- Serve warm or chilled with whipped cream or a scoop of vanilla ice cream.
