Ingredients

  • 450 g cream cheese, softened
  • 150 g granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 240 g crushed pineapple, well drained
  • 150 g all-purpose flour
  • 100 g granulated sugar
  • 100 g unsalted butter, melted
  • 100 g chopped pecans
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • 30 g chopped pecans (optional topping)
  • Powdered sugar, for dusting (optional)
  • Whipped cream, for serving (optional)

Instructions

  1. Preheat the oven to 175°C. Lightly grease a 23 × 33 cm baking dish.
  2. Beat the softened cream cheese and sugar until smooth and creamy. Add the eggs one at a time, beating well after each addition. Mix in the vanilla.
  3. Gently fold the well-drained crushed pineapple into the cream cheese mixture.
  4. In a bowl, combine the flour, sugar, chopped pecans, cinnamon, and salt. Pour in the melted butter and stir until the mixture forms coarse, crumbly pieces.
  5. Pour the pineapple cream cheese mixture into the prepared baking dish and spread evenly. Sprinkle the pecan crunch mixture generously over the top.
