A delicious and moist banana bread recipe inspired by the Pioneer Woman, featuring the rich flavor of pecans.
Ingredients
- 3 very ripe bananas, mashed
- ½ cup unsalted butter, melted
- ¾ cup granulated sugar
- ¼ cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1¾ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- ½ tsp ground cinnamon
- ¾ cup chopped pecans
Instructions
- Preheat oven to 350°F. Grease a 9×5-inch loaf pan and line with parchment paper.
- In a large bowl, whisk together the mashed bananas, melted butter, granulated sugar, and brown sugar.
- Add the eggs and vanilla. Mix until smooth.
- In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
- Gradually stir the dry ingredients into the banana mixture until just combined. Do not overmix.
- Fold in the chopped pecans, reserving a few for the top if desired.
- Pour the batter into the prepared loaf pan and sprinkle with the remaining pecans.
- Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Let the banana bread cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely.
- Slice and serve warm or at room temperature.

- Ensure bananas are very ripe for the best flavor.
- Store leftover banana bread in an airtight container at room temperature.
