Description

Delicious and chewy fruit cookies inspired by the Pioneer Woman, perfect for any occasion.


Ingredients

  • 225 g unsalted butter, softened
  • 200 g granulated sugar
  • 100 g brown sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 375 g all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 150 g dried cranberries
  • 100 g raisins
  • 100 g chopped dried apricots
  • 100 g chopped pecans or walnuts
  • 100 g white chocolate chips, optional

Instructions

  1. Cream the butter and sugars: Beat the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2–3 minutes.
  2. Add the wet ingredients: Beat in the eggs one at a time, then mix in the vanilla.
  3. Combine the dry ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  4. Make the dough: Gradually add the dry ingredients to the butter mixture. Mix just until combined.
  5. Add the fruit and nuts: Fold in the dried cranberries, raisins, dried apricots, nuts, and white chocolate chips if using.
  6. Chill: Cover the dough and refrigerate for 30 minutes. This helps prevent the cookies from spreading too much.
  7. Bake: Preheat the oven to 175°C. Scoop the dough into balls and place them about 5 cm apart on a lined baking sheet.
  8. Bake for 10–12 minutes, until the edges are lightly golden but the centers are still soft.
  9. Cool: Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
  10. Glaze: Whisk powdered sugar, milk, and vanilla until smooth. Drizzle over the completely cooled cookies.

  • For a more festive fruitcake-style cookie, add chopped candied cherries, candied orange peel, and a pinch of cinnamon or nutmeg.
