Description
Piyaz is a traditional Turkish white bean salad that combines the creaminess of tahini dressing with fresh vegetables and hard-boiled eggs, making it a refreshing and nutritious dish.
Ingredients
- 3 cups cooked white beans, drained and rinsed
- 1 small red onion, thinly sliced
- 2 medium tomatoes, diced
- ½ cup fresh parsley, chopped
- 2 hard-boiled eggs, quartered
- ¼ cup Kalamata olives, optional
- 1 tbsp sumac
- ½ tsp salt
- ¼ tsp black pepper
- ¼ cup tahini
- 3 tbsp fresh lemon juice
- 2 tbsp extra-virgin olive oil
- 1 tbsp apple cider vinegar
- 1 clove garlic, minced
- 2–3 tbsp cold water
- ½ tsp ground cumin
- ¼ tsp salt
- ¼ tsp black pepper
Instructions
- Prepare the beans: Place the drained and rinsed white beans in a large bowl. Pat them gently with paper towels if they are very wet.
- Prepare the vegetables: Add the sliced red onion, diced tomatoes, and chopped parsley to the beans.
- Make the tahini dressing: Whisk together tahini, lemon juice, olive oil, vinegar, garlic, cumin, salt, and pepper. The mixture will initially become thick. Gradually whisk in cold water until smooth and creamy.
- Dress the salad: Pour the tahini dressing over the beans and vegetables. Gently toss until everything is well coated.
- Add seasoning: Sprinkle with sumac and adjust the salt and pepper to taste.
- Chill: Cover and refrigerate for about 30 minutes to allow the flavors to develop.
- Garnish: Transfer to a serving dish and arrange the hard-boiled egg quarters around the salad. Add Kalamata olives and a little extra parsley or sumac if desired.
- Serve: Serve chilled or at room temperature with warm pita, crusty bread, or grilled meat.
Notes
- Cannellini, Great Northern, or navy beans all work well.
- Thinly slice the onion for the best texture and flavor.
- If the tahini dressing becomes too thick, whisk in another tablespoon of cold water.
- For a more traditional presentation, arrange the egg quarters around the edges rather than mixing them into the salad.
- Piyaz tastes even better after resting, so it can be prepared several hours ahead.
