Description

Protein Tuscan Chicken & Broccoli Cottage Cheese Bake delightfully combines flavors for a healthy meal!


Ingredients

  • 1 1/2 lbs boneless, skinless chicken breasts, cut into bite-size pieces
  • 4 cups broccoli florets
  • 1 cup cottage cheese
  • 1/2 cup plain Greek yogurt
  • 1/2 cup freshly grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes, optional
  • 1 tbsp olive oil
  • 1/4 cup chicken broth

Instructions

  1. Preheat oven to 400°F. Lightly grease a 9×13-inch baking dish.
  2. Heat olive oil in a skillet over medium-high heat. Season the chicken with paprika, salt, and pepper. Cook for 4–5 minutes, stirring occasionally, until lightly browned. The chicken does not need to be fully cooked yet.
  3. Steam or blanch the broccoli for 2–3 minutes, then drain well.
  4. Blend the cottage cheese, Greek yogurt, Parmesan, garlic, Italian seasoning, chicken broth, and red pepper flakes until smooth and creamy.
  5. Add the chicken, broccoli, and sun-dried tomatoes to the baking dish.
  6. Pour the cottage cheese sauce over everything and toss gently to coat.
  7. Sprinkle mozzarella evenly over the top.
  8. Bake uncovered for 20–25 minutes, until bubbling and the chicken reaches 165°F internally.
  9. Broil for 1–2 minutes at the end if you want a golden, bubbly cheese topping.
  10. Let rest for 5 minutes before serving.
