Protein Tuscan Chicken & Broccoli Cottage Cheese Bake delightfully combines flavors for a healthy meal!
Ingredients
- 1 1/2 lbs boneless, skinless chicken breasts, cut into bite-size pieces
- 4 cups broccoli florets
- 1 cup cottage cheese
- 1/2 cup plain Greek yogurt
- 1/2 cup freshly grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup sun-dried tomatoes, chopped
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes, optional
- 1 tbsp olive oil
- 1/4 cup chicken broth
Instructions
- Preheat oven to 400°F. Lightly grease a 9×13-inch baking dish.
- Heat olive oil in a skillet over medium-high heat. Season the chicken with paprika, salt, and pepper. Cook for 4–5 minutes, stirring occasionally, until lightly browned. The chicken does not need to be fully cooked yet.
- Steam or blanch the broccoli for 2–3 minutes, then drain well.
- Blend the cottage cheese, Greek yogurt, Parmesan, garlic, Italian seasoning, chicken broth, and red pepper flakes until smooth and creamy.
- Add the chicken, broccoli, and sun-dried tomatoes to the baking dish.
- Pour the cottage cheese sauce over everything and toss gently to coat.
- Sprinkle mozzarella evenly over the top.
- Bake uncovered for 20–25 minutes, until bubbling and the chicken reaches 165°F internally.
- Broil for 1–2 minutes at the end if you want a golden, bubbly cheese topping.
- Let rest for 5 minutes before serving.

- For an even heartier meal, serve it over cooked pasta, rice, or quinoa.
