Description

A delicious Pumpkin Cake with a sweet Apple Cider Glaze, perfect for fall gatherings.

Ingredients

  • Apple Filling
  • 2 medium apples, peeled, cored, and diced
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon all-purpose flour
  • Bread Batter
  • 1½ cups all-purpose flour
  • 1½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup whole milk
  • Cinnamon Sugar Layer
  • ⅓ cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • Glaze
  • 1 cup powdered sugar
  • 23 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F. Grease and line a 9×5-inch loaf pan with parchment paper.
  2. Prepare the apples: Toss the diced apples with sugar, cinnamon, and flour. Set aside.
  3. Make the batter: Whisk flour, baking powder, and salt in a bowl.
  4. In a separate bowl, beat the softened butter and sugar until light and fluffy. Beat in the eggs one at a time, then mix in the vanilla.
  5. Add the dry ingredients alternately with the milk, mixing just until combined.
  6. Layer the bread: Spread half of the batter into the loaf pan. Add half of the apples and sprinkle with half of the brown sugar-cinnamon mixture.
  7. Add the remaining batter, then top with the remaining apples and cinnamon sugar. Gently press the apples slightly into the batter.
  8. Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  9. Cool in the pan for 15 minutes, then transfer to a wire rack and cool completely.
  10. Make the glaze: Whisk powdered sugar, milk, and vanilla until smooth. Drizzle generously over the cooled bread.

Notes

  • Use Granny Smith, Honeycrisp, or Fuji apples for the best texture and sweet-tart flavor.
  • For a true country-style apple fritter taste, don’t skimp on the cinnamon-sugar apple layer!
