Description

Pumpkin Pie Egg Rolls are a delightful twist on traditional pumpkin pie, featuring a crispy exterior and a sweet pumpkin filling, served with a creamy white chocolate topping.


Ingredients

  • 14 egg roll wrappers
  • 1 can (15 oz / 425 g) pumpkin puree
  • ½ cup (100 g) packed brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground nutmeg
  • Water, for sealing wrappers
  • Vegetable oil, for frying
  • 1 package (3.5 oz / 100 g) instant white chocolate pudding mix
  • 1 cup (240 mL) skim milk
  • 1 container (8 oz / 227 g) Cool Whip, thawed
  • Caramel topping, as desired

Instructions

  1. In a large bowl, whisk together the pumpkin puree, brown sugar, vanilla, cinnamon, salt, ginger, cloves, and nutmeg until well combined.
  2. Place one egg roll wrapper on a clean surface with one corner pointing toward you. Place about 2 tablespoons of pumpkin filling near the bottom corner. Brush the edges with water. Fold the bottom corner over the filling, then fold in the left and right corners. Roll the wrapper upward and seal the final edge with water. Make sure the edges are completely sealed so the filling doesn’t escape during frying. Repeat with the remaining wrappers and filling.
  3. Pour about 1 inch (2.5 cm) of vegetable oil into a medium saucepan. Heat the oil to 325°F (165°C). Carefully place the egg rolls into the hot oil, one at a time. Fry for about 60 seconds, or until golden brown and crispy. Remove with a slotted spoon and place on a paper towel-lined plate.
  4. In a bowl, whisk the instant white chocolate pudding mix with the milk until smooth. Fold in the thawed Cool Whip until completely combined.
  5. Top the warm pumpkin pie egg rolls with the white chocolate Cool Whip and drizzle generously with caramel topping. Serve immediately.
