Ingredients
- 1 lb lean ground beef
- 8 oz mushrooms, sliced
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 2 cups fresh spinach
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried oregano
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ cup low-sodium beef broth
- 1 tablespoon chopped fresh parsley
Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the ground beef and cook for 6–8 minutes, breaking it apart as it browns. Drain excess grease if needed.
- Add the remaining olive oil, onion, and mushrooms. Cook for 5–7 minutes, until the mushrooms are browned and the onion is tender.
- Stir in the garlic and cook for 30 seconds.
- Add Worcestershire sauce, oregano, smoked paprika, salt, and black pepper. Stir well.
- Pour in the beef broth and simmer for 2–3 minutes, allowing the flavors to combine.
- Stir in the spinach and cook for 2–3 minutes, until wilted.
- Sprinkle with fresh parsley and serve hot.

- For a lower fat option, use extra-lean ground beef.
- Feel free to add other vegetables like bell peppers or zucchini.
