Description

A quick and easy recipe for a delicious peanut butter caramel cheesecake with a chocolate cookie crust.

Ingredients

  • 2 cups finely crushed chocolate sandwich cookies, about 10 oz
  • 5 tbsp unsalted butter, melted
  • 1 pinch salt, optional
  • 16 oz cream cheese, softened
  • ¾ cup creamy peanut butter
  • ¾ cup powdered sugar
  • 1 tsp vanilla extract
  • 1½ cups heavy whipping cream, cold
  • ¼ tsp salt
  • ¾ cup thick caramel sauce or dulce de leche
  • 2 tbsp heavy cream, if needed to thin the caramel
  • ¼ tsp flaky sea salt, optional
  • ½ cup semisweet chocolate chips
  • 1 tsp coconut oil or vegetable oil
  • ⅓ cup roasted peanuts, roughly chopped
  • ¼ cup mini chocolate chips, optional
  • Whipped cream, optional

Instructions

  1. Prepare the Crust: Place the chocolate cookies in a food processor and pulse until finely crushed. Combine the crumbs with the melted butter and salt. Press the mixture into the bottom of a 9-inch springform pan lined with parchment paper. Refrigerate for 20–30 minutes.
  2. Make the Peanut Butter Filling: Beat the softened cream cheese until smooth. Add the peanut butter, powdered sugar, vanilla extract, and salt. Beat until fully combined.
  3. Whip the Cream: In a separate bowl, beat the cold heavy whipping cream until medium-stiff peaks form. Gently fold the whipped cream into the peanut butter mixture.
  4. Fill the Cheesecake: Spoon the peanut butter filling onto the crust and spread it evenly. Tap the pan to remove air pockets.
  5. Add the Caramel Layer: Warm the caramel sauce if too thick, then pour it over the cheesecake filling. Sprinkle with flaky sea salt if desired.
  6. Chill Until Firm: Cover and refrigerate for at least 6 hours, preferably overnight.
  7. Prepare the Chocolate Drizzle: Melt the chocolate chips and coconut oil in a microwave-safe bowl. Drizzle over the caramel topping.
  8. Garnish and Serve: Sprinkle with chopped roasted peanuts and mini chocolate chips. Add whipped cream if desired and slice to serve.

Notes

  • For best results, chill the cheesecake overnight.
  • Use a sharp knife warmed under hot water for clean slices.
  • Reserve some caramel for drizzling over individual slices if preferred.
