Description

Ingredients

  • 1 package (16.5 oz) refrigerated sugar cookie dough
  • 2 tablespoons all-purpose flour
  • 8 oz cream cheese, softened
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1½ cups fresh raspberries
  • 1/3 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 2 tablespoons water
  • 1/2 cup powdered sugar (optional)
  • 12 tablespoons milk (optional)
  • 1/4 teaspoon vanilla extract (optional)

Instructions

  1. Preheat the oven to 350°F. Line a 12-inch pizza pan or large baking sheet with parchment paper.
  2. Mix the sugar cookie dough with the flour. Press it evenly into a 10–12-inch circle, leaving a small border around the edge.
  3. Bake for 10–13 minutes, until the edges are lightly golden. Let the crust cool completely.
  4. Beat the softened cream cheese, sugar, and vanilla until smooth. Beat in the egg until just combined.
  5. Spread the cheesecake mixture evenly over the cooled cookie crust, leaving about 1/2 inch around the edge.
  6. Bake for another 15–18 minutes, until the cheesecake layer is set. Cool completely.
  7. For the raspberry topping, combine raspberries, sugar, cornstarch, lemon juice, and water in a small saucepan. Cook over medium heat for 5–7 minutes, stirring gently, until the berries break down and the mixture thickens.
  8. Let the raspberry topping cool for several minutes, then spread it over the cheesecake layer.
  9. Refrigerate for at least 1 hour before slicing.
  10. For the optional glaze, whisk powdered sugar, milk, and vanilla together. Drizzle over the dessert pizza before serving.

Notes

  • For the cleanest slices, chill the pizza thoroughly and use a sharp knife.
