Description

Delicious raspberry cream cheese cinnamon rolls that are soft, fluffy, and topped with a creamy frosting.


Ingredients

  • 240 ml warm whole milk
  • 7 g active dry yeast
  • 50 g granulated sugar
  • 60 g unsalted butter, melted
  • 1 large egg
  • 3 g salt
  • 360420 g all-purpose flour
  • 115 g cream cheese, softened
  • 50 g granulated sugar
  • 5 ml vanilla extract
  • 2 g ground cinnamon
  • 150 g fresh raspberries
  • 30 g raspberry jam
  • 115 g cream cheese, softened
  • 30 g unsalted butter, softened
  • 120 g powdered sugar
  • 5 ml vanilla extract
  • 1530 ml milk or heavy cream

Instructions

  1. Combine the warm milk, yeast, and 15 g of the sugar. Let sit for 5–10 minutes until foamy.
  2. Add the remaining sugar, melted butter, egg, and salt. Gradually add the flour and mix until a soft dough forms.
  3. Knead for 6–8 minutes until smooth and elastic. Cover and let rise for 1 hour, or until doubled in size.
  4. Beat the cream cheese, sugar, vanilla, and cinnamon until smooth.
  5. Roll the dough into a 45 × 25 cm rectangle.
  6. Spread the cream cheese mixture evenly over the dough. Spread the raspberry jam over the filling and scatter the raspberries on top.
  7. Roll tightly from the long side into a log. Cut into 12 equal rolls.
  8. Arrange in a greased 23 × 33 cm baking dish. Cover and let rise for 30–45 minutes.
  9. Bake at 175°C for 20–25 minutes, until lightly golden.
  10. For the frosting, beat the cream cheese and butter until smooth. Add powdered sugar and vanilla, then gradually add milk or cream until creamy.
  11. Spread the frosting over the warm cinnamon rolls and serve.
