Description

Indulge in these decadent Raspberry Swirl Brownies, featuring a rich chocolate base swirled with a creamy raspberry and cream cheese mixture.


Ingredients

  • 1 cup unsalted butter, melted
  • 1½ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 3 large eggs
  • 2 tsp vanilla extract
  • 1 cup all-purpose flour
  • ½ tsp salt
  • ½ cup semi-sweet chocolate chips
  • ¾ cup fresh or frozen raspberries
  • 2 tbsp granulated sugar
  • 1 tsp lemon juice
  • 4 oz cream cheese, softened
  • ¼ cup powdered sugar
  • 1 egg yolk
  • ½ tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a saucepan or microwave-safe bowl, melt the butter. Whisk in the sugar and cocoa powder.
  3. Add the eggs and vanilla and whisk until smooth.
  4. Stir in the flour and salt just until combined. Fold in the chocolate chips.
  5. Make the raspberry mixture: Cook raspberries, sugar, and lemon juice in a small saucepan over medium heat for 4–5 minutes, until softened. Mash lightly and let cool.
  6. In a bowl, beat cream cheese, powdered sugar, egg yolk, and vanilla until smooth.
  7. Spread about ¾ of the brownie batter into the prepared pan.
  8. Spoon the cream cheese mixture over the brownie layer, followed by small spoonfuls of raspberry sauce.
  9. Add the remaining brownie batter in dollops. Use a knife or skewer to gently swirl the brownie, cheesecake, and raspberry layers together.
  10. Bake for 30–38 minutes, until the edges are set and the center is slightly fudgy.
  11. Cool completely in the pan before slicing.

  • For a more intense raspberry flavor, use fresh raspberries if available.
