Description
A decadent Red Velvet Cheesecake layered with cookie dough, perfect for special occasions.
Ingredients
- 2 cups red velvet cake mix
- 1/2 cup unsalted butter, melted
- 1 large egg
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 8 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/4 cup sour cream
- 1/4 cup heavy cream
- 1/4 cup mini chocolate chips
Instructions
- Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan with cooking spray.
- In a mixing bowl, combine the red velvet cake mix, melted butter, and 1 egg. Mix until well combined. Press the mixture evenly into the bottom of the prepared springform pan to form the crust.
- In another bowl, mix the flour, brown sugar, granulated sugar, salt, and vanilla extract. Stir in the remaining 1 egg until a dough forms. Fold in the mini chocolate chips. Scoop small portions of the cookie dough and drop them over the red velvet crust, spreading them out evenly.
- In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the granulated sugar and vanilla extract, mixing until well combined. Add the eggs one at a time, mixing well after each addition. Finally, stir in the sour cream and heavy cream until smooth.
- Pour the cheesecake batter over the cookie dough layer in the springform pan. Smooth the top with a spatula.
- Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.
- Remove from the oven and let it cool to room temperature, then refrigerate for at least 4 hours or overnight before serving.
Notes
- For a richer flavor, add a tablespoon of cocoa powder to the cheesecake batter.
- You can top the cheesecake with whipped cream and additional mini chocolate chips for an extra treat.
- If you prefer a lighter version, substitute the heavy cream with Greek yogurt.
