A delightful Red, White and Blue Layered Berry Cheesecake Trifle perfect for festive occasions.
Ingredients
- 2 (8-ounce) packages cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon pure vanilla extract
- 1 teaspoon fresh lemon juice
- 1½ cups heavy whipping cream (for cheesecake filling)
- 1 prepared pound cake or angel food cake (about 14–16 ounces), cut into 1-inch cubes
- 2 cups fresh strawberries, hulled and sliced
- 2 cups fresh blueberries
- 1 cup fresh raspberries
- 1 tablespoon granulated sugar (optional, for sweeter berries)
- 1 cup heavy whipping cream (for whipped cream topping)
- 2 tablespoons powdered sugar (for whipped cream topping)
- ½ teaspoon vanilla extract (for whipped cream topping)
- Fresh strawberries (for garnish)
- Blueberries (for garnish)
- Raspberries (for garnish)
- Fresh mint leaves (optional, for garnish)
- White chocolate curls (optional, for garnish)
Instructions
- Make the Cheesecake Filling: In a large mixing bowl, beat the cream cheese until smooth and creamy. Add powdered sugar, vanilla extract, and lemon juice. Beat until well combined. In a separate bowl, whip 1½ cups of heavy cream to stiff peaks. Gently fold the whipped cream into the cream cheese mixture until smooth and fluffy.
- Prepare the Berries: Slice the strawberries. If desired, toss all the berries with 1 tablespoon sugar and let them sit for 10 minutes to release a little juice.
- Make the Whipped Cream: Beat together 1 cup heavy whipping cream, powdered sugar, and vanilla until stiff peaks form.
- Assemble the Trifle: In a large trifle bowl (or individual dessert glasses), layer in this order: cake cubes, cheesecake filling, mixed berries. Repeat the layers until all ingredients are used. Finish with whipped cream on top. Decorate with fresh strawberries, blueberries, raspberries, and mint leaves if desired.
- Chill: Cover and refrigerate for at least 2 hours, or up to 24 hours, before serving.
Notes
- For a sweeter berry layer, add granulated sugar to the mixed berries.
- This trifle can be made a day in advance for convenience.
