  • 1 tablespoon sesame seeds

Instructions

  1. Start by washing the cucumbers thoroughly. Cut them in half lengthwise and scoop out the seeds with a spoon if they are large. Slice the cucumbers into thin half-moons or bite-sized pieces.
  2. Place the cucumber slices in a bowl and sprinkle with salt. Toss to coat and let them sit for about 10 minutes to draw out excess moisture.
  3. After 10 minutes, drain any liquid that has accumulated in the bowl.
  4. In a separate small bowl, whisk together the sugar, rice vinegar, soy sauce, sesame oil, and chili oil (if using) until the sugar is dissolved.
  5. Pour the dressing over the cucumbers and toss to combine.
  6. Add the sesame seeds and chopped green onions, mixing gently to incorporate.
  7. Let the salad sit for at least 10 minutes before serving to allow the flavors to meld. Serve chilled or at room temperature.
