Ingredients
- 2 large cucumbers
- 1 teaspoon salt
- 1 tablespoon sugar
- 2 tablespoons rice vinegar
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon chili oil (optional)
- 1 tablespoon sesame seeds
- 2 green onions, finely chopped
Instructions
- Start by washing the cucumbers thoroughly. Cut them in half lengthwise and scoop out the seeds with a spoon if they are large. Slice the cucumbers into thin half-moons or bite-sized pieces.
- Place the cucumber slices in a bowl and sprinkle with salt. Toss to coat and let them sit for about 10 minutes to draw out excess moisture.
- After 10 minutes, drain any liquid that has accumulated in the bowl.
- In a separate small bowl, whisk together the sugar, rice vinegar, soy sauce, sesame oil, and chili oil (if using) until the sugar is dissolved.
- Pour the dressing over the cucumbers and toss to combine.
- Add the sesame seeds and chopped green onions, mixing gently to incorporate.
- Let the salad sit for at least 10 minutes before serving to allow the flavors to meld. Serve chilled or at room temperature.
Notes
- For added crunch, consider including sliced radishes or shredded carrots.
- To make it a more substantial dish, serve the cucumbers over a bed of mixed greens or with grilled chicken.
