Ingredients

  • 75 g unsalted butter
  • 125 g all-purpose flour
  • 25 g granulated sugar
  • 2 large eggs
  • 100 g light brown sugar, packed
  • 55 g shredded coconut
  • 60 g chopped pecans
  • 1.25 mL salt
  • 0.6 mL baking powder
  • 2.5 mL vanilla extract
  • 2 teaspoons (10 mL) finely grated lemon zest
  • 30 mL fresh lemon juice
  • 120 g powdered sugar

Instructions

  1. Preheat the oven: Heat the oven to 350°F (175°C). Lightly grease an 8 × 8-inch (20 × 20 cm) baking pan.
  2. Make the crust: Cut the butter into the flour and granulated sugar using a pastry blender or two knives until the mixture becomes fine and crumbly.
  3. Bake the crust: Press the mixture firmly and evenly into the bottom of the pan. Bake for 15–20 minutes, until lightly golden.
  4. Prepare the filling: In a bowl, combine the eggs, brown sugar, shredded coconut, chopped pecans, salt, baking powder, and vanilla. Mix until well combined.
  5. Add the filling: Spread the mixture evenly over the partially baked crust.
  6. Bake again: Return the pan to the oven and bake for 25–30 minutes, until the filling is set and lightly golden.
  7. Make the lemon glaze: While the bars are baking, whisk together the lemon zest, lemon juice, and powdered sugar until smooth.
  8. Glaze: Remove the bars from the oven and let them cool for about 5 minutes. Spread the lemon glaze over the warm bars.
  9. Cool completely: Allow the bars to cool completely before cutting.
