Description
A delightful Rhubarb Jelly Roll Cake filled with sweet rhubarb and dusted with powdered sugar.
Ingredients
- 2 cups fresh rhubarb, chopped
- 1 cup granulated sugar, divided
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup milk
- Powdered sugar, for dusting
Instructions
- In a medium saucepan over medium heat, combine the chopped rhubarb and 1/2 cup of granulated sugar. Cook for about 5-7 minutes, stirring occasionally, until the rhubarb is tender and has released its juices. Remove from heat and let cool.
- Preheat the oven to 375°F. Grease a 15×10-inch jelly roll pan and line it with parchment paper, then grease the parchment paper.
- In a mixing bowl, whisk together the flour, baking powder, and salt.
- In another bowl, beat the eggs and remaining 1/2 cup of granulated sugar until light and fluffy, about 3-5 minutes. Stir in the vanilla extract and milk.
- Gradually add the dry ingredients to the egg mixture, mixing until just combined. Pour the batter into the prepared jelly roll pan, spreading it evenly.
- Bake for 12-15 minutes, or until the cake is lightly golden and springs back when touched. Remove from the oven and let cool for 5 minutes.
- While the cake is still warm, invert it onto a clean kitchen towel dusted with powdered sugar. Carefully peel off the parchment paper.
- Spread the cooled rhubarb mixture evenly over the cake. Starting from one edge, roll the cake tightly with the towel, enclosing the filling. Let it cool completely in the rolled position.
- Once cooled, unroll the cake, remove the towel, and re-roll it without the filling. Dust with additional powdered sugar before serving.
Notes
- For a sweeter filling, add a tablespoon of honey or maple syrup to the rhubarb mixture.
- Try substituting the rhubarb with strawberries or blueberries for a different flavor profile.
