Description

Roasted Cauliflower with Lemon is a flavorful and healthy dish that combines the nutty taste of roasted cauliflower with the bright acidity of lemon.

Ingredients

  • 1 large head cauliflower, cut into florets
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • Lemon wedges
  • 1 tablespoon extra lemon juice, if desired

Instructions

  1. Preheat the oven: Preheat to 425°F. Line a large baking sheet with parchment paper.
  2. Prepare the cauliflower: Wash the cauliflower and dry it thoroughly. Cut into evenly sized florets so they roast at the same rate.
  3. Make the seasoning: In a large bowl, whisk together the olive oil, minced garlic, lemon zest, Italian seasoning, paprika, salt, and black pepper.
  4. Coat the cauliflower: Add the cauliflower florets to the bowl. Toss until every piece is evenly coated with the garlic seasoning.
  5. Arrange on the baking sheet: Spread the florets in a single layer, leaving space between them. Avoid overcrowding to help them brown properly.
  6. Roast: Bake for 25–30 minutes, turning halfway through, until the cauliflower is tender and golden brown with crispy edges.
  7. Add the lemon: Remove from the oven and immediately drizzle with fresh lemon juice. Toss gently to coat.
  8. Add Parmesan: Sprinkle with grated Parmesan cheese while the cauliflower is still hot.
  9. Garnish and serve: Finish with fresh parsley and additional lemon wedges. Serve warm.

Notes

  • Dry the cauliflower thoroughly before roasting to encourage browning.
  • Cut the florets into similar sizes for even cooking.
  • Use a large baking sheet and avoid overcrowding.
  • Roast at a high temperature for beautifully caramelized edges.
  • Add lemon juice after roasting to preserve its fresh, bright flavor.
  • For extra crispiness, roast for an additional 3–5 minutes.
