A delicious and healthy dish featuring roasted green beans and butternut squash, enhanced with crispy bacon and crunchy pumpkin seeds.
Ingredients
- 2 cups fresh green beans, trimmed
- 2 cups butternut squash, peeled and diced
- 4 slices bacon, chopped
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1/4 cup pumpkin seeds (pepitas)
- 1 tablespoon balsamic vinegar (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine the green beans, butternut squash, and chopped bacon.
- Drizzle the olive oil over the mixture and sprinkle with garlic powder, onion powder, salt, and pepper. Toss until everything is evenly coated.
- Spread the mixture in a single layer on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the vegetables are tender and the bacon is crispy.
- In the last 5 minutes of roasting, sprinkle the pumpkin seeds over the top.
- If desired, drizzle with balsamic vinegar before serving.
Notes
- For a vegetarian option, omit the bacon and add 1/4 cup of nutritional yeast for a cheesy flavor.
- Add a pinch of red pepper flakes for a spicy kick.
