A delightful salad featuring roasted peaches, crunchy pistachios, and creamy honey ricotta, perfect for a refreshing meal.
Ingredients
- 4 ripe peaches, halved and pitted
- 2 tablespoons olive oil
- Salt and pepper to taste
- 6 cups mixed salad greens (such as arugula, spinach, and baby kale)
- 1/2 cup shelled pistachios, roughly chopped
- 1/2 cup ricotta cheese
- 2 tablespoons honey
- 1 tablespoon lemon juice
- Fresh mint leaves for garnish
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Place the halved peaches on the baking sheet, cut side up. Drizzle with olive oil and season with salt and pepper. Roast in the oven for 15-20 minutes, or until the peaches are tender and slightly caramelized.
- While the peaches are roasting, prepare the honey ricotta. In a small bowl, combine the ricotta cheese, honey, and lemon juice. Mix until smooth and creamy.
- Once the peaches are done, remove them from the oven and let them cool slightly.
- In a large bowl, toss the mixed salad greens with the chopped pistachios. Divide the salad among serving plates.
- Top each salad with the roasted peach halves and a generous dollop of honey ricotta. Garnish with fresh mint leaves.
- Serve immediately and enjoy!
Notes
- For added flavor, sprinkle some crumbled feta cheese over the salad before serving.
- Substitute the peaches with nectarines or plums for a different twist on this salad.
