Description

A delightful salad featuring roasted peaches, crunchy pistachios, and creamy honey ricotta, perfect for a refreshing meal.


Ingredients

  • 4 ripe peaches, halved and pitted
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 6 cups mixed salad greens (such as arugula, spinach, and baby kale)
  • 1/2 cup shelled pistachios, roughly chopped
  • 1/2 cup ricotta cheese
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • Fresh mint leaves for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Place the halved peaches on the baking sheet, cut side up. Drizzle with olive oil and season with salt and pepper. Roast in the oven for 15-20 minutes, or until the peaches are tender and slightly caramelized.
  3. While the peaches are roasting, prepare the honey ricotta. In a small bowl, combine the ricotta cheese, honey, and lemon juice. Mix until smooth and creamy.
  4. Once the peaches are done, remove them from the oven and let them cool slightly.
  5. In a large bowl, toss the mixed salad greens with the chopped pistachios. Divide the salad among serving plates.
  6. Top each salad with the roasted peach halves and a generous dollop of honey ricotta. Garnish with fresh mint leaves.
  7. Serve immediately and enjoy!
