Description
A delicious and colorful side dish featuring roasted sweet potatoes and butternut squash, seasoned with herbs and spices.
Ingredients
- 2 medium sweet potatoes, peeled and cut into 1-inch cubes
- 1 small butternut squash, peeled, seeded, and cut into 1-inch cubes
- 3 tbsp olive oil
- 2 tbsp unsalted butter, melted
- 3 cloves garlic, minced
- 1 tsp dried rosemary
- 1 tsp dried thyme
- 1/2 tsp paprika
- 1/2 tsp salt, or to taste
- 1/4 tsp black pepper
- 2 tbsp chopped fresh parsley
- 1 tbsp honey or maple syrup (optional)
- 1/4 cup crumbled feta cheese (optional)
Instructions
- Preheat the oven. Preheat to 425°F. Line a large baking sheet with parchment paper.
- Prepare the vegetables. Peel and cube the sweet potatoes and butternut squash into similar-sized pieces so they roast evenly.
- Make the seasoning. In a large bowl, whisk together the olive oil, melted butter, garlic, rosemary, thyme, paprika, salt, and black pepper.
- Coat the vegetables. Add the sweet potatoes and butternut squash to the bowl. Toss until every piece is evenly coated with the seasoning mixture.
- Arrange on the baking sheet. Spread the vegetables in a single layer, leaving space between the pieces to help them caramelize.
- Roast until tender. Bake for 30–35 minutes, flipping the vegetables halfway through, until golden brown on the outside and fork-tender inside.
- Add the finishing touches. If desired, drizzle with honey or maple syrup during the last 5 minutes of roasting. Sprinkle with fresh parsley and crumbled feta cheese before serving.
- Serve warm. Enjoy as a colorful side dish with roasted chicken, grilled salmon, steak, or your favorite vegetarian main course.
Notes
- Cut the vegetables into evenly sized cubes for consistent cooking.
- Avoid overcrowding the baking sheet; use two pans if necessary.
- For a savory twist, add a pinch of chili flakes or sprinkle with Parmesan cheese.
- For extra crunch, scatter chopped pecans or walnuts over the vegetables just before serving.
- Refrigerate leftovers in an airtight container for up to 4 days. Reheat in a 400°F oven for 8–10 minutes to restore their roasted texture.
