Ruth’s Chris Seafood Spinach Rockefeller is a creamy and delicious dish featuring shrimp, scallops, and fresh spinach, perfect for seafood lovers.
Ingredients
- 2 cups fresh spinach, chopped
- 225 g shrimp, peeled, deveined, and chopped
- 225 g scallops, chopped
- 115 g cream cheese, softened
- ½ cup heavy cream
- ½ cup grated Parmesan cheese, divided
- 2 tbsp butter
- ¼ cup finely chopped onion
- 2 cloves garlic, minced
- 2 tbsp breadcrumbs, optional
- 1 tbsp lemon juice
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp paprika
- ¼ tsp nutmeg
Instructions
- Prepare the spinach: Blanch the spinach for about 1–2 minutes until wilted. Transfer to ice water, drain, squeeze very dry, and chop.
- Sauté the aromatics: Melt butter in a skillet over medium heat. Add onion and garlic and cook for 2–3 minutes until fragrant.
- Cook the seafood: Add shrimp and scallops. Cook for about 3–4 minutes, just until the seafood is nearly cooked through.
- Make it creamy: Lower the heat and stir in cream cheese and heavy cream. Add ¼ cup Parmesan, lemon juice, salt, pepper, paprika, and nutmeg.
- Add spinach: Fold in the prepared spinach and mix until everything is creamy and well combined.
- Bake: Transfer to a greased baking dish. Sprinkle with the remaining Parmesan and breadcrumbs if using.
- Bake at 175°C (350°F) for 20–25 minutes, until bubbling and golden on top.
- Rest for 5 minutes before serving.
Notes
- Breadcrumbs are optional but add a nice texture on top.
- Ensure the seafood is fresh for the best flavor.
- This dish can be served as an appetizer or a main course.
