Ruth’s Chris Seafood Spinach Rockefeller is a creamy and delicious dish featuring shrimp, scallops, and fresh spinach, perfect for seafood lovers.


Ingredients

  • 2 cups fresh spinach, chopped
  • 225 g shrimp, peeled, deveined, and chopped
  • 225 g scallops, chopped
  • 115 g cream cheese, softened
  • ½ cup heavy cream
  • ½ cup grated Parmesan cheese, divided
  • 2 tbsp butter
  • ¼ cup finely chopped onion
  • 2 cloves garlic, minced
  • 2 tbsp breadcrumbs, optional
  • 1 tbsp lemon juice
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp paprika
  • ¼ tsp nutmeg

Instructions

  1. Prepare the spinach: Blanch the spinach for about 1–2 minutes until wilted. Transfer to ice water, drain, squeeze very dry, and chop.
  2. Sauté the aromatics: Melt butter in a skillet over medium heat. Add onion and garlic and cook for 2–3 minutes until fragrant.
  3. Cook the seafood: Add shrimp and scallops. Cook for about 3–4 minutes, just until the seafood is nearly cooked through.
  4. Make it creamy: Lower the heat and stir in cream cheese and heavy cream. Add ¼ cup Parmesan, lemon juice, salt, pepper, paprika, and nutmeg.
  5. Add spinach: Fold in the prepared spinach and mix until everything is creamy and well combined.
  6. Bake: Transfer to a greased baking dish. Sprinkle with the remaining Parmesan and breadcrumbs if using.
  7. Bake at 175°C (350°F) for 20–25 minutes, until bubbling and golden on top.
  8. Rest for 5 minutes before serving.

Notes

  • Breadcrumbs are optional but add a nice texture on top.
  • Ensure the seafood is fresh for the best flavor.
