Ingredients
- 1 pound canned salmon, drained and flaked
- 1 cup breadcrumbs
- 1/4 cup finely chopped green onions
- 1/4 cup mayonnaise
- 1 large egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh lemon juice
- 1 tablespoon chopped fresh dill (optional)
- 1 tablespoon olive oil (for frying)
- 1 ripe avocado
- 1/4 cup Greek yogurt
- 1 tablespoon lime juice
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- In a large bowl, combine the salmon, breadcrumbs, green onions, mayonnaise, egg, garlic powder, onion powder, salt, pepper, lemon juice, and dill (if using). Mix until well combined.
- Shape the mixture into small balls, about 1 inch in diameter.
- Heat olive oil in a large skillet over medium heat. Add the salmon balls in batches, cooking for about 4-5 minutes on each side or until golden brown. Remove and drain on paper towels.
- For the creamy avocado sauce, mash the avocado in a bowl and mix in the Greek yogurt, lime juice, minced garlic, salt, and pepper until smooth.
- Serve the salmon balls warm with a side of creamy avocado sauce for dipping.
