Description
Quick and delicious salmon patties made using canned salmon.
Ingredients
- 2 cans (14.75 oz each) canned salmon, drained and flaked
- 2 large eggs
- ½ cup breadcrumbs
- ¼ cup finely diced onion
- 2 tablespoons mayonnaise
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- ½ teaspoon garlic powder
- ½ teaspoon dried parsley
- ¼ teaspoon black pepper
- ¼ teaspoon salt, or to taste
- 2 tablespoons cooking oil, for frying
Instructions
- Drain the canned salmon well and remove the skin and bones if preferred. Flake the salmon with a fork.
- In a large bowl, combine salmon, eggs, breadcrumbs, onion, mayonnaise, lemon juice, Dijon mustard, garlic powder, parsley, pepper, and salt.
- Mix until well combined. Let the mixture rest for 5–10 minutes so the breadcrumbs absorb moisture.
- Shape into 8–10 patties, about ½-inch thick.
- Heat the oil in a skillet over medium heat.
- Fry the patties for 3–4 minutes per side, or until golden brown and crisp.
- Transfer to a paper-towel-lined plate and serve warm.
Notes
- Serve with lemon wedges, tartar sauce, or a simple garlic mayo dip.
