Description

Quick and delicious salmon patties made using canned salmon.


Ingredients

  • 2 cans (14.75 oz each) canned salmon, drained and flaked
  • 2 large eggs
  • ½ cup breadcrumbs
  • ¼ cup finely diced onion
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • ½ teaspoon dried parsley
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt, or to taste
  • 2 tablespoons cooking oil, for frying

Instructions

  1. Drain the canned salmon well and remove the skin and bones if preferred. Flake the salmon with a fork.
  2. In a large bowl, combine salmon, eggs, breadcrumbs, onion, mayonnaise, lemon juice, Dijon mustard, garlic powder, parsley, pepper, and salt.
  3. Mix until well combined. Let the mixture rest for 5–10 minutes so the breadcrumbs absorb moisture.
  4. Shape into 8–10 patties, about ½-inch thick.
  5. Heat the oil in a skillet over medium heat.
  6. Fry the patties for 3–4 minutes per side, or until golden brown and crisp.
  7. Transfer to a paper-towel-lined plate and serve warm.
