Ingredients

  • 2 cups (250 g) all-purpose flour
  • 1½ cups (300 g) granulated sugar
  • 1 teaspoon (5 g) baking powder
  • ½ teaspoon (3 g) baking soda
  • ½ teaspoon (3 g) salt
  • ½ cup (113 g) unsalted butter, softened
  • ½ cup (120 ml) buttermilk
  • 3 large eggs
  • 2 teaspoons (10 ml) vanilla extract
  • 1 cup (120 g) chopped pecans
  • ½ cup (113 g) unsalted butter (for frosting)
  • 1 cup (200 g) packed brown sugar
  • ½ cup (120 ml) heavy cream
  • ½ teaspoon (3 g) salt (for frosting)
  • 1 teaspoon (5 ml) vanilla extract (for frosting)
  • 2½ cups (300 g) powdered sugar
  • ¾ cup (90 g) chopped pecans (for topping)
  • 23 tablespoons (30–45 ml) caramel sauce (for topping)
  • A small pinch of flaky sea salt (for topping)

Instructions

  1. Preheat the oven to 175°C (350°F). Grease and line two 8-inch (20-cm) round cake pans.
  2. Whisk together flour, sugar, baking powder, baking soda, and salt.
  3. Beat in the softened butter, buttermilk, eggs, and vanilla until smooth. Fold in the chopped pecans.
  4. Divide the batter between the pans. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  5. Let cakes cool in the pans for about 10 minutes, then transfer to a rack and cool completely.
  6. Melt butter in a saucepan. Add brown sugar and cream. Bring to a gentle boil, stirring constantly, for about 2 minutes. Remove from heat and stir in salt and vanilla. Cool until lukewarm.
  7. Gradually beat in the powdered sugar until the frosting becomes smooth and spreadable.
  8. Place one cake layer on a plate and spread with frosting. Add the second layer and frost the top and sides.
  9. Drizzle with caramel sauce, sprinkle with chopped pecans, and add a little flaky sea salt.
