Ingredients
- 3 cups broccoli florets
- 1 medium bell pepper, sliced
- 1 medium zucchini, sliced
- 1 medium carrot, thinly sliced
- ½ small red onion, sliced
- 3 tbsp butter
- 4 cloves garlic, minced
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp Italian seasoning
- 1 tbsp lemon juice
- 2 tbsp grated Parmesan cheese
- 1 tbsp chopped fresh parsley
Instructions
- Heat a large skillet over medium-high heat. Add 1 tbsp butter.
- Add the broccoli and cook for 4–5 minutes, stirring occasionally, until browned and lightly charred.
- Add the carrots, bell pepper, zucchini, and red onion. Cook for another 5–7 minutes, stirring frequently, until the vegetables are tender-crisp.
- Push the vegetables to one side of the skillet. Add the remaining 2 tbsp butter and minced garlic.
- Cook the garlic for 30–60 seconds, until fragrant, then toss everything together.
- Season with salt, black pepper, and Italian seasoning.
- Cook for another 1–2 minutes to allow the flavors to combine.
- Remove from heat and drizzle with lemon juice.
- Sprinkle with Parmesan and fresh parsley.
- Serve immediately as a flavorful side dish or light vegetarian meal.

- For a vegan option, substitute butter with olive oil and omit Parmesan cheese.
