Ingredients

  • 680 g fresh green beans, trimmed
  • 3 tablespoons (45 g) unsalted butter
  • 1 tablespoon (15 mL) olive oil
  • 5 cloves garlic, minced
  • ½ teaspoon (2.5 mL) red pepper flakes, or to taste
  • ½ teaspoon (2.5 mL) salt
  • ¼ teaspoon (1.25 mL) black pepper
  • 1 tablespoon (15 mL) fresh lemon juice
  • 2 tablespoons (8 g) fresh parsley, finely chopped
  • ¼ teaspoon (1.25 mL) smoked paprika, optional

Instructions

  1. Blanch the green beans: Bring a large pot of salted water to a boil. Add the green beans and cook for 3–4 minutes, until bright green and tender-crisp.
  2. Cool the beans: Drain immediately and transfer the beans to a bowl of ice water for 1–2 minutes. Drain well.
  3. Make the garlic butter: Heat the olive oil and butter in a large skillet over medium heat. Once the butter melts, add the minced garlic and cook for 30–60 seconds, until fragrant. Be careful not to burn the garlic.
  4. Add seasoning: Stir in the red pepper flakes, salt, black pepper, and smoked paprika if using.
  5. Add the green beans: Add the drained green beans to the skillet. Toss well to coat them in the garlic butter.
  6. Sauté: Cook for 4–6 minutes, tossing occasionally, until the beans are heated through and lightly browned in spots.
  7. Finish: Remove from the heat and toss with the lemon juice and fresh parsley.
  8. Serve: Transfer to a serving dish and spoon any remaining garlic butter from the skillet over the top.
