A delicious and easy recipe for skillet butter and garlic mushrooms and cauliflower, perfect as a side dish or a light meal.
Ingredients
- 1 pound cauliflower florets
- 8 ounces mushrooms, sliced
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped (optional for garnish)
- 1 tablespoon lemon juice
Instructions
- In a large skillet, melt the butter over medium heat.
- Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the sliced mushrooms to the skillet and cook for 5-7 minutes, stirring occasionally, until they are browned and tender.
- Stir in the cauliflower florets, salt, and black pepper. Cook for an additional 8-10 minutes, stirring occasionally, until the cauliflower is tender and slightly caramelized.
- Remove from heat and stir in the lemon juice. Garnish with chopped parsley if desired.
- Serve warm.
Notes
- For a creamier version, add 1/4 cup of heavy cream during the last few minutes of cooking.
- To add some heat, sprinkle in red pepper flakes while sautéing the garlic.
