Description
Southern Banana Cobbler is a sweet and comforting dessert made with ripe bananas and a buttery batter, perfect for serving warm with ice cream.
Ingredients
- 3 ripe bananas, sliced
- 1 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 cup milk
- 1/4 cup unsalted butter, melted
- 1/2 teaspoon almond extract (optional)
- 1 cup chopped pecans or walnuts (optional)
- Vanilla ice cream (for serving, optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish with butter or non-stick spray.
- In a large bowl, combine the sliced bananas, granulated sugar, lemon juice, vanilla extract, cinnamon, and salt. Gently toss to coat the bananas and set aside to marinate for about 10 minutes.
- In another bowl, whisk together the flour and baking powder. Gradually add the milk and melted butter, stirring until just combined. If using, fold in the almond extract and chopped nuts.
- Pour the banana mixture into the prepared baking dish, spreading it evenly. Then, drop spoonfuls of the batter over the top of the bananas, covering as much of the surface as possible.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted into the batter comes out clean.
- Allow the cobbler to cool for about 10 minutes before serving. Serve warm with a scoop of vanilla ice cream if desired.
Notes
- For a richer flavor, try adding a teaspoon of nutmeg along with the cinnamon.
- Substitute the bananas with peaches or apples for a seasonal twist on this cobbler.
