Description

A delicious Southern Pecan Praline Cake that combines the rich flavors of pecans and a sweet praline topping, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ½ cup unsalted butter, softened
  • 1 cup buttermilk
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup chopped pecans
  • 1 cup brown sugar (for praline topping)
  • ½ cup unsalted butter (for praline topping)
  • ½ cup heavy cream (for praline topping)
  • 1 cup chopped pecans (for praline topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Mix until just combined. Fold in the chopped pecans.
  6. Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.
  8. While the cakes are cooling, prepare the praline topping by combining brown sugar, butter, and heavy cream in a saucepan over medium heat. Bring to a boil, stirring constantly, and let it boil for 2-3 minutes.
  9. Remove from heat and stir in the chopped pecans.
  10. Once the cakes are completely cool, place one layer on a serving plate and spread half of the praline topping over the top. Place the second layer on top and spread the remaining praline topping over the top of the cake.

Notes

  • For a richer flavor, try adding a teaspoon of cinnamon to the cake batter.
  • You can substitute walnuts for pecans if desired.
