Ingredients
- 2 cans (20 oz each) crushed pineapple, undrained
- ½ cup granulated sugar
- 2 tbsp cornstarch
- 1 tsp vanilla extract
- 8 oz cream cheese, softened
- ½ cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1½ cups all-purpose flour
- ¾ cup granulated sugar
- 2 tsp baking powder
- ½ tsp salt
- ½ cup unsalted butter, melted
- ¾ cup whole milk
- 1 tsp vanilla extract
- ½ cup chopped pecans, optional
Instructions
- Preheat oven to 350°F. Grease a 9×13-inch baking dish.
- In a saucepan, combine crushed pineapple, sugar, cornstarch, and vanilla. Cook over medium heat for 3–5 minutes, stirring until slightly thickened.
- Pour the pineapple mixture into the prepared baking dish.
- Beat softened cream cheese, sugar, egg, and vanilla until smooth and creamy. Drop spoonfuls over the pineapple layer and gently spread.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- Stir in melted butter, milk, and vanilla until just combined. Do not overmix.
- Spoon the batter evenly over the cream cheese layer. Sprinkle with pecans if using.
- Bake for 40–50 minutes, until the top is golden brown and set.
- Let cool for at least 15–20 minutes before serving.
