Ingredients

  • 2 teaspoons baking powder

  • 3 large eggs
  • 1 cup granulated sugar
  • ½ cup packed brown sugar
  • 1 cup pumpkin puree
  • ½ cup vegetable oil
  • ¼ cup apple cider
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 23 tablespoons apple cider
  • 1 tablespoon unsalted butter, melted
  • ½ teaspoon ground cinnamon
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F. Grease and flour a 9×13-inch baking pan or a 10-inch Bundt pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.
  3. In a large bowl, whisk eggs, granulated sugar, brown sugar, pumpkin puree, oil, apple cider, and vanilla until smooth.
  4. Gradually add the dry ingredients to the pumpkin mixture. Stir just until combined—don’t overmix.
  5. Pour the batter into the prepared pan. Bake for 40–50 minutes, or until a toothpick inserted in the center comes out clean. If using a Bundt pan, begin checking around 45 minutes.
  6. Let the cake cool in the pan for 10–15 minutes, then transfer to a wire rack and cool completely.
  7. Whisk powdered sugar, apple cider, melted butter, cinnamon, and vanilla until smooth. Add a little more cider if needed to reach a pourable consistency.
  8. Drizzle the apple cider glaze generously over the cooled pumpkin cake.
  9. Let the glaze set for 10–15 minutes, then slice and serve.
