Ingredients
- 3 medium yellow squash, sliced into ¼-inch rounds
- 3 medium zucchini, sliced into ¼-inch rounds
- 1 small yellow onion, thinly sliced
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1 cup shredded cheddar cheese
- ½ cup sour cream
- ½ cup mayonnaise
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon paprika
- ½ cup grated Parmesan cheese
- 1 cup seasoned breadcrumbs
- 2 tablespoons melted butter
- ½ teaspoon dried Italian seasoning
Instructions
- Preheat the oven to 375°F (190°C). Lightly grease a 9 × 13-inch baking dish.
- Heat 2 tablespoons butter in a large skillet over medium heat. Add the sliced onion and garlic and sauté for 2–3 minutes.
- Add the zucchini and yellow squash. Cook for 5–7 minutes, stirring occasionally, until slightly softened. Do not overcook.
- Remove from the heat and drain any excess liquid.
- In a large bowl, combine the sour cream, mayonnaise, shredded cheddar cheese, salt, black pepper, and paprika.
- Add the cooked zucchini, squash, onion, and garlic. Gently toss until evenly coated.
- Transfer the vegetable mixture to the prepared baking dish.
- In a small bowl, combine the breadcrumbs, Parmesan cheese, melted butter, and Italian seasoning.
- Sprinkle the breadcrumb mixture evenly over the casserole.
- Bake uncovered for 30–35 minutes, or until the vegetables are tender and the top is golden brown and crispy.
- For an extra-browned topping, broil for 1–2 minutes at the end, watching carefully.
- Let the casserole rest for 5–10 minutes before serving.
- Serve warm as a side dish with roasted chicken, pork chops, steak, or grilled fish.
