Ingredients

  • 3 medium yellow squash, sliced into ¼-inch rounds
  • 3 medium zucchini, sliced into ¼-inch rounds
  • 1 small yellow onion, thinly sliced
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • ½ cup mayonnaise
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ cup grated Parmesan cheese
  • 1 cup seasoned breadcrumbs
  • 2 tablespoons melted butter
  • ½ teaspoon dried Italian seasoning

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a 9 × 13-inch baking dish.
  2. Heat 2 tablespoons butter in a large skillet over medium heat. Add the sliced onion and garlic and sauté for 2–3 minutes.
  3. Add the zucchini and yellow squash. Cook for 5–7 minutes, stirring occasionally, until slightly softened. Do not overcook.
  4. Remove from the heat and drain any excess liquid.
  5. In a large bowl, combine the sour cream, mayonnaise, shredded cheddar cheese, salt, black pepper, and paprika.
  6. Add the cooked zucchini, squash, onion, and garlic. Gently toss until evenly coated.
  7. Transfer the vegetable mixture to the prepared baking dish.
  8. In a small bowl, combine the breadcrumbs, Parmesan cheese, melted butter, and Italian seasoning.
  9. Sprinkle the breadcrumb mixture evenly over the casserole.
  10. Bake uncovered for 30–35 minutes, or until the vegetables are tender and the top is golden brown and crispy.
  11. For an extra-browned topping, broil for 1–2 minutes at the end, watching carefully.
  12. Let the casserole rest for 5–10 minutes before serving.
  13. Serve warm as a side dish with roasted chicken, pork chops, steak, or grilled fish.
